Magical Grapes

Made in collaboration with family-run Magical Grapes Farm in Ventura County and Chef Virgilio Martinez is back in limited quantities. Magical Grapes III is about showcasing the rare flavor of coveted Shinano Smiles native to Japan, grown locally here in California, in a brand-new form. We worked with Chef Virgilio on a recipe to highlight the sweet, grassy flavor of the Shinanos, prized for their fragrant juiciness and picture-perfect appearance.  

We push the grapes through a wine press, pound organic ginger and pink peppercorns in a mortar and pestle, then cold steep the mixture in the resulting juice for a lightly sparkly, warming flavor that compliments our sun-grown flower and doesn’t distract from the fruit.
