Rose Chocolate with Beit Jala olive oil and wild foraged Palestinian za’atar was made in collaboration with Olive Odyssey, a Palestinian company that works with olive growers across the country to support the harvest of generational farms. They sent us olive oil and wild za’atar which we stone ground with savory sumac in a chocolate refiner for 8 hours to form a silky, homogenous mixture. The resulting flavor is balanced and aromatic with just a touch of spice to compliment the herbal notes of the sun-grown flower. “In Palestine, olive oil is something farmers harvest only once a year. A lot of families rely on this income for the rest of the year and a lot of farmers were not able to harvest this year at all.”

“This chocolate bar went beyond my expectations. I am probably biased as I have a large container of za’atar on my kitchen counter, but this paired with the beautiful sweet bitterness of the chocolate, I had a very difficult time not consuming the entire bar. But the real reason I wanted to try this edible was because I suffer from constant chronic pain because of my rare Ehlers-Danlos syndrome. I have been looking for something that would help me relax the tension in my body and this did just that. I felt so much lighter. “In a word, the chocolate is beautiful. Visually, the packaging and chocolate are minimalist and look very nice. The chocolate itself is unlike any I've had before. I would describe it as savory, with the bit of salt pairing well with the dominant za'atar. The olive oil is subtle, but all the elements come together so well and create a really unique bar. The addition of THC has a calming effect for my mind, making it quiet rather than a high. A big part of what makes the chocolate beautiful to me isn't just the sum of its parts, but also its purpose. Our custom cacao blend is made in collaboration with La Rifa, an artisanal chocolatería in Mexico City. Each bar is crafted from a diverse array of cacao cultivars from southeastern Mexico, resulting in complex flavor deeply rooted in its origin.

Crafted in our kitchen using traditional artisanal techniques.

Each unique recipe is refined for over six hours, blending in organic ingredients like heirloom bananas, Papantla vanilla, and Alexandre Family Farm kefir to create deep flavor, rich complexity, and an exceptionally smooth mouthfeel.
