Our low-waste Delight with Pierce Abernathy starts with a seasonal peach and sea buckthorn puree, thinned with cold-pressed Oro Blanco and Page mandarin juices. We visited Chez Panisse, Zuni Café, and Mister Jiu’s to recover any veggies they could spare, landing on a green juice-inspired blend of carrot tops, fennel tops, and parsley stems, which we swirled into the fruit juice base at the end to keep things bright green. Each Delight is coated in our own candied fresh ginger and carrot-top powder, delivering layered, bright flavors that unfold in waves.
