Hoshigaki Persimmon begins with precious air-dried Hachiyas. Edible works of art, firm Hachiyas are harvested before maturing, peeled, hung to cure, and manually massaged for months until they release a thin layer of naturally-preserving sugar, with sweet flesh the texture of a fresh Medjool date.
Following the patient process, we delicately slice each persimmon into cross sections, keeping the whole shape of the fruit intact to ornament our 70% landrace cacao bar with glittering, intensely flavored Hoshigaki jewels. Hoshigaki Persimmon pairs our chocolate with pops of luxurious Hoshigaki, allowing each element to be experienced both individually and in harmony.

Our custom cacao blend is made in collaboration with La Rifa, an artisanal chocolatería in Mexico City. Each bar is crafted from a diverse array of cacao cultivars from southeastern Mexico, resulting in complex flavor deeply rooted in its origin.

Each unique recipe is refined for over six hours, blending in organic ingredients like heirloom bananas, Papantla vanilla, and Alexandre Family Farm kefir to create deep flavor, rich complexity, and an exceptionally smooth mouthfeel.
