Pluot and Saratoga Bay Leaf

Celebrating the first days of Summer’s California harvest with one of our most inspiring collaborators.

Pluot and Saratoga Bay Leaf was made in collaboration with June Taylor, a Berkeley-based jam-maker who has dedicated her life to the art of preserving. The recipe begins with garnet-colored Flavor King pluots from Blossom Bluff Orchard, picked at the start of the season as June prefers early-harvest fruit. We left the skins on in our puree for extra tang, supplementing the pluot’s brightness with fresh-squeezed orange juice and zest. Saratoga Bay Laurel is an aromatic complement, more complex than Mediterranean Bay with a delicate, creamy flavor. We steeped the leaves in the fruit along with warming Madagascar vanilla bean to bring out a gentle, rounded sweetness.
