Rose Chocolate pairs landrace Mexican cacao varieties1 with seasonal California fruit, herbs from our farm, and sun-grown flower rosin2 for bars with layered flavor and a uniquely smooth texture.3



Chocolate is a valuable vehicle for cannabis confectionery because it eliminates the need for heat. Tempering keeps fluid chocolate below 90°F, well under the temperature at which sugar caramelizes and roughly 100 degrees below what’s needed for the pectin in other confections to set.




We traveled to Tabasco, Mexico, to trace back our chocolate to its origin, spending long afternoons in cacao groves, sharing meals and stories with the families behind our beans. We learned here that making chocolate begins with careful observation. Trees are pruned by phases of the moon, fermentation is guided by scent, and beans dry in the sun until their color and texture signal they’re ready to be roasted.
This generational knowledge, informed by land, ingredients, and intuition shaped our approach to Rose Chocolate back in our kitchen, where we worked intuitively, guided by taste, feel, and the ingredients.
